Where It All Began: Foynes, County Limerick
The origins of Irish Coffee trace back to the 1940s, at Foynes Airbase, a seaplane terminal in County Limerick. It was a cold, foggy night when a transatlantic flight bound for North America had to turn back due to bad weather.
To warm up the weary and disappointed passengers, chef Joe Sheridan, who worked at the airbase restaurant, decided to add a splash of Irish whiskey to their coffee — and float lightly whipped cream on top.
When asked if it was Brazilian coffee, Sheridan reportedly replied:
“No, it’s Irish coffee.”
And just like that, the name — and the drink — were born.
From Ireland to America: The San Francisco Connection
The drink might have remained a local curiosity if it weren’t for travel writer Stanton Delaplane, who tasted it at Shannon Airport (which had replaced Foynes) in the 1950s.
Delaplane brought the idea back to the Buena Vista Café in San Francisco, where he worked with bartender Jack Koeppler to perfect the floating cream technique.
- The café officially started serving Irish Coffee in 1952.
- They even flew Joe Sheridan to San Francisco to show them how to do it right.
To this day, the Buena Vista Café claims to have served over 40 million Irish Coffees.
