Tattoo Artist Found Guilty of Murdering Chef with Sword in Cork Car Park
A Tragic Encounter in Cobh
In a harrowing case that has gripped the community of Cobh, County Cork, 31-year-old tattoo artist Dylan Scannell was found guilty of the murder of 33-year-old chef and father-of-two, Ian Baitson. The incident occurred on March 15, 2024, in the car park of a Eurospar supermarket on Newtown Road. Scannell attacked Baitson with a samurai sword, delivering a blow behind the left knee that nearly amputated his leg. Baitson succumbed to his injuries four days later at Cork University Hospital.

The Trial and Verdict
During the trial at the Central Criminal Court in Cork, Scannell admitted to manslaughter but denied murder, claiming he intended only to scare Baitson over a debt dispute. However, the jury rejected this defense, returning a unanimous guilty verdict for murder after over four hours of deliberation. The court heard that Scannell had sent threatening messages to Baitson prior to the attack, including one where he threatened to chop off Baitson’s fingers. At the time of the meeting, Baitson had €185 in cash to repay what he believed was a debt of less than €500, but Scannell insisted he was owed €2,500. Baitson never got the chance to hand over the money before he was attacked.
Medical Evidence and Aftermath
Assistant State Pathologist Dr. Margaret Bolster testified that the sword wound caused massive hemorrhage and shock, complicated by brain damage due to lack of blood supply. The blow fractured the knee bone and sliced through the tibia and fibula. After the attack, Scannell disposed of the sword by throwing it into the harbor near Connolly Street in Cobh. He was later arrested and charged with murder.
Sentencing and Community Impact
Scannell is scheduled to be sentenced on July 11, 2025, where he is expected to receive a mandatory life sentence for murder. The case has left a profound impact on the local community, highlighting issues related to drug debts and violent crime. Baitson’s family expressed their grief and gratitude to those who assisted him during his final days.
